- 1 medium size tomato finely chopped
- 1/2 tsp turmeric powder
- 1 tsp red chili powder

- 2 tbsp oil
- For Maxican Rice:-
- 1 cup rice
- 3/4 cup tomato puree
- 10-12 garlic cloves finely chopped
- 1 medium size onion finely chopped
- 1/4 cup green capsicum chopped
- 1/4 cup red bell pepper chopped
- 1/4 cup yellow bell pepper chopped
- 1/4 cup sweet corn kernels
- 1/4 cup rajma (overnight soaked and 80% cooked)
- 1.5 tbsp tomato ketchup
- 2 tbsp spring onion
- 2 tbsp jalapeno
- 1 tsp chili powder
- 1 tsp chili flakes
- 3/4 tsp oregano
- For Salsa:-
- 1 medium size onion (finely chopped)
- 1 medium size tomato (finely chopped)
- 2-3 green chillies chopped
- 2 tbsp coriander leaves
- 1/2 lemon juice
- to taste Salt
- Others ingredients:-
- 2 tbsp Mayonnaise
- 2 large size Tortillas
- as required grated cheese
Instructions to make to make Mexican Chicken Burrito wrap
- To Make Chicken:- In a bowl add chicken cubes, ginger garlic paste, red peparika powder, mix everything properly and keep it aside for 15-20 minutes.
- In a kadai heat oil and add cumin seeds. Let them crackle then add green chillies, onion and saute until light golden. Now add turmeric powder red chili powder, and saute for few minutes. Add tomatoes and saute for 2-3 minutes on medium flame.
- Now add marinated chicken, mix it once properly and then add salt, water. Then cover and cook for 10-15 minutes or until chicken cooked properly. Switch off the flame and keep it aside.
- Make Salsa:- In a bowl add chopped onion, tomato, green chillies, coriander leaves, lemon juice and salt. Mix everything properly. Keep it aside.
- To Make Maxican Rice:- Soak the rice in water and keep it aside.
- To a wide pan add oil and butter. Once butter melts add chopped onion garlic and green chillies. Once onion turns transparent add tomato puree and mix everything and cook for 2-3 minutes.
- Now add all veggies and chill flakes, oregano, red peparika powder, maxican herbs. Mix gently and cook it for 4-5 minutes.
- Now add washed rice and mix it. Toast the rice for about 3-4 minutes on medium flame. Finally add 2 cups of water (rice water ratio is 1:2) Add rajma, salt and tomato ketchup. Mix well. Cover the pot, reduce the flame and let it cook to 90%.
- Now add jalapeno chopped spring onion mix well and Again cover and cook on medium flame for 5 minutes. Rest it for 15 minutes. Maxican Rice is ready.
- For Assembling Maxican Chicken Burrito Wrap:-
First slightly roast the tortilla both sides. - Then place it on a plate and spread 1 tbsp Mayonnaise. Now add Some maxican Rice then add some chicken add s1 tbsp salsa, and spread grated cheese over it.
- To roll it, properly fold the both sides in and then roll it tightly from the side completely.
- Now heat a grilled pan with add some butter and grilled the wrap both sides for 2-3 minutes. It's ready to be served with some mayonnaise dip and salsa.
