  2. 2 cups mixed vegetables (carrots, beans, potatoes, and cauliflower cut into cubes)

  10. 1 tsp whole jeera
  11. 2 tbsp jeera powder
  12. 2 tbsp dhania powder
  13. 1 tsp saunf powder
  14. 1 tsp Kashmiri red chilli powder
  15. 1/2 tsp turmeric powder
  16. 1 1/2 tsp salt or to taste
  17. 1 tbsp lemon juice
  18. 2 bay leaves (tej patta)
  19. as needed Oil for deep frying
  20. 1 tsp kewra essence
  21. Garam masala
  22. 2 black cardamom
  23. 6 green cardamom
  24. 1 inch piece of cinnamon
  25. 5 cloves
  26. 10 peppercorns
  27. 1 star anise
  28. 1 pc mace

Steps to make to make Subz Biryani

  1. Soak the rice for half an hour. Boil it with a bay leaf and a teaspoon of salt until it is 80% cooked. It should be grainy when mashed between fingers.
  2. Deep fry two sliced onions until golden brown and keep aside.

  9. Add the curd and the paneer. Save some paneer pieces for the top layer. Mix well.
  10. To arrange, first switch off the flame. Top the vegetables with half of the fried onions, chopped coriander leaves, and mint leaves. Save some for garnish. Cover it with the boiled rice.
  11. Top the rice with coriander leaves, mint leaves, fried onions, and the remaining paneer pieces. Add a tablespoon of the onion flavored oil and the kewra essence.
  12. Cover it with a lid. Switch on the flame and cook on high for 2-3 minutes. Reduce the heat and cook for 3-4 minutes. Switch off the flame and let it rest for 5 minutes. Remove the lid.
  13. Subz Biryani is ready to serve. Garnish with lemon slices and chopped coriander leaves, mint leaves, and the fried onions.
